SPAN, known as Sorbitan Fatty Acid Esters, is a significant group of non – ionic surfactants, parallel to the TWEEN series, with its own set of unique features and applications.

I. Basic Information

SPAN surfactants typically have a relatively mild odor. They exist in various physical forms depending on the specific fatty acid ester. For example, Span 20 (sorbitan monolaurate) is a light – colored, waxy solid, while Span 80 (sorbitan monooleate) is a viscous, amber – colored liquid. The synthesis of SPAN involves the reaction of sorbitol with fatty acids under appropriate conditions. Sorbitol, a sugar alcohol, first undergoes dehydration to form anhydrides. These anhydrides then react with fatty acids such as lauric acid, stearic acid, or oleic acid to yield the corresponding SPAN esters.

II. Chemical Properties

Hydrophilic – Lipophilic Balance (HLB) Values

SPAN surfactants generally have lower HLB values compared to TWEEN. This means they are more lipophilic. The fatty acid chains in SPAN provide strong hydrophobic interactions, while the sorbitan backbone offers some degree of hydrophilicity. For instance, Span 20 has an HLB value of around 8.6. indicating its preference for oil – based systems. This property makes SPAN suitable for creating water – in – oil (W/O) emulsions, as it can surround water droplets and disperse them in an oil – continuous phase.

Stability

SPAN is relatively stable under normal conditions. It shows good resistance to hydrolysis in neutral and acidic media. However, in the presence of strong alkalis, hydrolysis can occur, breaking down the ester bonds in the surfactant molecule. Similar to TWEEN, the fatty acid chains in SPAN are also susceptible to oxidation over time, especially when exposed to air and light. This oxidation can lead to a change in the surfactant’s properties, such as a decrease in its emulsifying ability.

III. Applications

Food Industry

Emulsifier in W/O Systems: In the food industry, SPAN is widely used as a water – in – oil emulsifier. For example, in margarine production, SPAN helps to disperse water droplets evenly in the oil – rich matrix. This ensures a stable texture and prevents the separation of water and oil phases. It is also used in certain types of chocolate products, where it helps to control the crystallization of cocoa butter and improves the product’s mouthfeel and shelf – life.

Antioxidant Synergist: SPAN can act as a synergist with antioxidants in food products. When combined with antioxidants like tocopherols (vitamin E), it can enhance the antioxidant effect. This is because SPAN can help to solubilize the antioxidant in the oil – phase of food products, increasing its effectiveness in preventing lipid oxidation and extending the shelf – life of the food.

Emulsifier and Thickener: In cosmetics, SPAN is used as an emulsifier for creating water – in – oil emulsions.
